The big move at work went very well. I love my new office! There are lots of things to still get used to and many more boxes to unpack. With all that work, I have been too tired to knit at night. I may have done three rows this week on my AbFab throw. There is always the weekend to catch up, I suppose.
Due to exhaustion, I have also not felt like cooking dinner at night, especially when I get home super late. Tonight, I stopped by Trader Joe's on my way home from work to pick up some ingredients for dinner. I made my version of Thai pizza. Here's what I did:
Whole Wheat pizza dough
thai peanut sauce (satay sauce)
grilled chicken cut into bite size pieces
diced green onions/scallions
mozzerella cheese shreds
Using a pizza pan or pizza baking stone, roll/throw/stretch out dough to a 12" circle. Spread peanut sauce over dough, using as much as you need to apply a thin coating. (Use more if you like it spicier.) Cover the sauce with the grilled chicken pieces. Cook sliced mushrooms (baby bellas work great, white buttons are ok too,) in about two tablespoons of terryaki sauce/marinade until liquid is absorbed. Spread cooked mushrooms onto dough with chicken. Cover with 3/4 of the shredded cheese then spread the shredded carrots on top. Cover carrots with remaining cheese. Sprinkle top with scallions. Bake at 400 degrees F for approximately 12 minutes, or until cheese is bubbling and dough is golden. Let rest for a minute before cutting into slices. Enjoy!
I first had this pizza as an appetizer at a party. The cook used a Boboli pizza shell. I used Boboli many times, but once I switched to Trader Joe's fresh dough, I was hooked. It bakes up very nicely.
