Last week's menu planning worked out well. We had lots of snow here in suburban Philly, so I ended up making soup three nights in row. I used the Chicken in the pot recipe on Wednesday to make chicken and rice soup. Half of the chicken was saved for the tortilla soup on Thursday. I have found that I can get at least two, if not more, meals by roasting or cooking a whole chicken once a week. In a pinch, I pick up a rotisserie chicken from my local grocery store and use that meat in dishes if I don't have time to cook the chicken myself. (Although lately I'm doing that less and less since buying my new cookware from 360 Cookware!)
This week's menu will include The Superbowl food. My husband is a Steeler's fan, so we will be watching. (I will be knitting.)
Monday: Pasta and meatballs, salad
Tuesday: Turkey burgers, sweet potato fries
Thursday: 360 Chicken parm
Friday: homemade pizza
Sunday: Game Day! Chili with corn bread or Buffalo Chicken Mac n Cheese
