(Happy Birthday Audrey!)
Last week's menu planning went beautifully. The only night I stalled was leftover night, but we did end up finishing up the white bean chili that night. I am not a huge fan of leftovers, but it certainly was convenient. My big night off from cooking was Saturday night, which was convenient since I've been fighting a cold and needed a break. We went to Ikea that night and had a ridiculously cheap dinner, since kids were free this past week. They sell a great laundry container/hamper that holds up well to my abuse, so I bought two more. We also picked up a cute Dr. Seuss-like blue plastic night stand for the monkey to go with his blue race car bed. He also asked for a cloud lamp, so now he has that too. We still need to break apart his crib so that we have more room to work with, but his little room is well on its way to being a nice preschooler room. In a year or two we will start looking for a bedroom set for him, but for now the toddler sized race car bed works well.
So this week's weather forecast is calling for snow, so soup is on my menu. I found a great recipe on a great site called copy cat recipes.
So this week it looks like we'll be eating:
Monday: Black Bean Soup...a family favorite!
Tuesday: Olive Garden Pasta E Fagioli soup with ground turkey instead of beef
Wednesday: Roasted Chicken with carrots and parsnips
Thursday: leftover chicken dish TBD, maybe tacos??
Friday: homemade Stromboli with Trader Joe's dough
Sunday: Moroccan chicken with lemons using the preserved lemons I made and cous cous.
I am really liking this menu planning! I went grocery shopping with my menu plans and was able to score some great savings on ingredients I need this week and for next! (I shopped a day early because they are calling for snow on Tuesday. I usually shop on Monday nights, but I'm thinking it might be a bit crazy there then.)
