Last week's dinner menu turned out fairly good. I tried two slow cooker recipes from Real Simple magazine. The mushroom and chicken pot pie was really good, but I think I would tweek the seasonings and use chicken stock instead of water next time to give it a bit more flavor. I liked using the puff pastry instead of baking the whole thing in a pie. It was easier and used less crust, making it slightly healthier than when baked in a full piecrust. I found square sheets of puff pastry at Trader Joe's and just cut one sheet into quarters for simplicity.
The other recipe I tried tasted good, but was so much more work than it should have been. When I use my crock pot, I want to make a one dish meal, possibly two. The soy-glazed chicken with stir fried veggies could have been done all together on the stovetop and not in the crock pot. In fact, I think the crock pot overcooked the chicken. I liked the marinade/sauce and would make it again. I also loved the veggies. It was the first time I've cook baby bok choy and it really was tasty. I added in some broccoli to the snap peas too. The recipe called for stir frying the veggies in one pan, reducing the sauce from the crock pot in another and a third for rice. I skipped the reduction, as there wasn't a great deal of sauce anyway and I just added it to the veggies. It was good, but again, I think I would not make it in the crock pot again.
This week's menu:
Monday: lasangna (I had a craving for it...will use the back of the box recipe with ground turkey and the no boil noodles.)
Tuesday: Chicken and broccoli stir fry with brown rice
Wednesday: Chicken tacos, salad
Thursday: Buffalo chicken salad from Ellie Krieger (this looks like a healthy alternative without sacraficing taste. This is my new to me recipe for the week.)
Friday: homemade pizza, salad
Saturday: out
Sunday: Mango Chicken Curry and rice. I haven't made chicken curry in years. I'll make it mild, since not everyone is big on curry here.

My son is continuing to be picky about eating, which has continued to make me a bit crazy. He stopped eating the chicken nuggets I made him at home and froze. He loves Chick-fil-a, so a little internet search turned up a recipe for their chicken sandwiches. I think I will try using their seasonings to make my own nuggets again and see if he likes it. When I cook chicken at home for nuggets, I do not deep fry, I cook in as little oil as possible to cook the coating, and then I bake them to finish cooking them. It uses much less oil. Apparently the secret to Chick-fil-a chicken is it is marinated in pickle juice! Will have to try this on the sly, since the former pickle eater swears he does not like pickles! He did eat a bit of fish this week, in the form of little fishy nuggets I found at Whole Foods. He also loves broccoli and fruit, so at least he eats mostly healthy foods. I wish he would at least taste more things.
