So last week was the first week of preschool in our house and it went incredibly well! The kiddo loved being back with his buddies, playing with the school toys and meeting new teachers. He even stayed one afternoon for lunch bunch, which is a big step of independence for him. He refused to do it last year after one time. This year he is looking forward to it each week because some of the kids from last year's class are there too so the "old gang" as he said, can play together.
Last week was also the start of soccer class, a once a week lesson at 4pm. Since it cuts into dinner prep time, that is a day I'll have to plan a slow cooker meal or something easy. The kiddo loved playing and ran around the entire 45 minutes of class.
Breakfasts: Since school is in session four days a week, we need easy and healthy breakfasts ready. My child is really picky lately, more so than usual, and doesn't eat much in the morning. Lately he's been drinking a lot of kefir or yogurt smoothies or munching on a whole grain frozen waffle. I made ham and cheese muffins on Sunday to freeze and use as a quick breakfast option during the week. I told him they were bacon muffins, since he loves bacon but won't eat ham. I'm hoping he will try them. They have a very mild flavor, and if I serve them with a bit of honey as suggested on the recipe, I think he might like them. I also am craving pumpkin bread, so I may make some of that this week too.
Monday: Homemade chick "fillet" sandwhiches and salads
Tuesday: Broccoli potato soup, salad
Wednesday: Chicken Enchillada Soup or just Enchilladas...not sure yet!
Thursday: Crock pot Veggie Lasanga, salad
Friday: Pizza and salad night!
