It's the end of January and a month closer to spring! It's been way too cold for me. Hoping this week's weather warm up helps!
I've been wanting to incorporate more fish into our menu/diets and struggle with this. I love shellfish, but it isn't exactly a healthy option to eat regularly. I like salmon and often bake it with a seasoned marinade or lemons. Last week I made a terryiaki marinated salmon that was good, and later in the week I made fish tacos with tilapia that instead of batter dipped, were lightly coated in corn meal/flour and fried in a bit of oil. This week I'm going to try making either flounder or tilapia piccata, since I really like lemon flavored fish. Have a favorite fish recipe to share? Please send me a link!
Monday: White chili with chicken
Tuesday: Tomato Ravioli Soup, bread sticks
Wednesday: Slow cooker creamy chicken mushroom pot pie
Thursday: Flounder Piccata, broccoli, rice or couscous
Friday: Taco pizza...ended up doing a stromboli last week!
Sunday: Apparently there is a football game on Sunday. Will make some fun party foods even though it's not exactly my thing. Found some good recipes that were altered to make them healthier on Skinnytaste. Going to try out Skinny Buffalo Chicken Dip, Asian Turkey Meatballs with lime sesame dipping sauce, and Skinny loaded nachos with turkey and black beans. I'll probably halve the receipes so that we can try out all three, although I have a feeling the buffalo chicken dip will be popular!
