The big hit last week was the Brushetta Chicken bake dish. I altered the recipe slightly by using organic bread cubes/stuffing mix without added seasoning. I reduced the cheese quantity too, but not by much. It was very tasty and well received. It would be a great dish to serve a crowd!
This week's menu includes two fish dishes and a favorite soup recipe.
Monday: baked salmon with a terryiaki marinade, broccoli and couscous
Tuesday: Chicken Tortilla Soup, chips and salsa
Wednesday: Oven baked chicken, veggies
Thursday: Fish Tacos with yellow rice
Friday: Pizza night...maybe taco pizza?
Sunday: at a birthday party for my niece...she's turning 10!!
