Sunday night I tried a new recipe from the Skinnytaste blog: Crock Pot Buffalo Chicken lettuce wraps. It was a hit and surprisingly fun to make. I have seen lettuce wraps on lots of menus, but I've never had them! It was a bit messy to eat, but very tasty and I only missed the carbs of the usual flour wrap a little bit. The recipe couldn't be easier and I think I'll make a double quantitiy next time to use half in other recipes. Since the kiddo is not a fan of super spicy, before I added the hot sauce to the chicken, I reserved a portion of plain shredded chicken for him. At first he really liked making his lettuce wrap, but it was a bit challenging to eat, so he declared it not his favorite. He ended up eating the chicken alone, and the veggies separately. I think I could give him a tortilla next time to fill and he'd be happy. I do think the buffalo chicken would also make a great tortilla wrap for a more portable meal, such as lunch. (Or in a completely unhealthy meal, such as buffalo mac and cheese!)
Menu Plan for this week:
This week's breakfasts will include oatmeal. I plan to make the Irish steel cut oats in the crock pot overnight once, as it takes so long to make in the morning. I haven't done that for a while. We need to eat more oatmeal! I am hoping this PB & J baked oatmeal will get the kiddo eating it more too!
Monday: baked Manicotti, salad (Meatless Monday)
Tuesday: Mushroom Risotto with salmon and salad
Wednesday: Crock pot chicken enchillada soup
Thursday: Chicken and veggie stir fry with brown rice
Friday: Turkey burgers with sweet potato fries
Saturday: TBD
Sunday: soup and bread. Maybe baked potato soup, maybe chicken noodle, depends on my mood!
