A couple of weeks ago I made burrito bowls for dinner. They were a real hit and will join the rotation of favorite meals here for a while. I liked that they were relatively easy to make and healthy. Instead of the tortilla in a typical burrito, I filled the plates with half mixed field greens and half cilantro-lime rice. I heated up some black beans seasoned with lime juice and cilantro to stay on the lime/cilantro theme. I topped the rice with the black beans. (I had found this recipe but it made such a large quantity, so instead I improvised with a can of organic black beans. I want to try that recipe at a later date, though.) Then I topped them with shredded pork that I had seasoned with a few tablespoons of Trader Joe's taco seasoning. I had previously cooked the pork roast in the slow cooker and froze half to use later. Shredding and reheating on the stove with the seaonings was easy and quick. I think using shredded chicken would be just as tasty.
I topped the pork with some salsa, shredded cheese , and cilantro and put some spicy ranch dressing on the table to be added if desired. I think this would acutally be a great party food, making a burrito bar of sorts with all kinds of toppings for guests to make up their own burrito bowl.
Menu plan for this week:
Sunday: muffin sized meatloafs, rosemary roasted potatoes, steamed broccoli
Monday: Enchillada soup with tortilla chips and salsa, salads (I linked a recipe, but I use a hybrid of several recipes, depending on what I have on hand.)
Tuesday: mom and son dinner out at kiddo's request!
Wednesday: Breakfast for dinner. Our favorite buttermilk pancakes.
Thursday: chicken stir fry and rice
Friday: homemade pizza night and salad
It's the Superbowl this upcoming weekend. Not a football fan, but I suppose we'll have some kind of game type food. Maybe I'll make buffalo chicken mac and cheese?
