January's new food for the month, green drinks, was a hit! Almost everyday the kiddo had some green drink either after school for a snack or in the morning. I still don't love them, but I can tolerate them and I know they are healthy.
In chatting with my family about what new food we should try in February, my son insisted that it be something none of us ever tried. While that is fine, I still want the focus to be on encouraging him to expand his palate and eat healthy foods. My husband suggested Fishie February! My son is not exactly thrilled with that, but I think he will give it a go. He likes fish and chips that we get at the shore and he has liked salmon cakes/burgers. I want to eat more fish too, so this is a great excuse to get more fish in our diet.
So, I'm fishing for recipes! So far I've found one that looks good for Mahi Mahi. I often bake a piece of salmon marinated in terryaki or even peanut sauce and we like to make fish tacos from time to time. I'll dig out all of those recipes this month, but I need to find some more. I even created a pinterest board just for the fish recipes I discover! Do you have a favorite fish recipe? Please share!!
