We have been hosting a July 4th BBQ for the past few years and will again today, despite the rain and chilly weather! Guests often bring side dishes or desserts to share, but I always make a few too. Here's our menu for this year:
On the grill: beef burgers, turkey burgers and hot dogs for the kids (we use the Trader Joe's dogs, since they are uncured/nitrate free beef ones!) Cheese optional!
Sides: Kale and quinoa salad in a citrus dressing (loosely based on the cited recipe, but I made adjustments!) I love this recipe and I am not a fan of kale, but eat it because it's good for me.
Drinks: Lemonade for the kiddos
Peach Iced tea
Dessert: Firecracker pops for the kids (my son's request was to have the ice cream truck come to our house so that I could buy each kid their own rocket pop, but for about $3.50 I bought a box at the grocery store!)
Marshmallows to toast
My friend is bringing a blueberry gingerbread cake (YUM!)
We are hoping the weather clears up in time for grilling and fireworks later. Hope you have a fun day with your family!
