Last week's menu plan turned out terrific. The salmon cakes with edamame were a surprise hit, although they were tough to cook without loosing their shape. I think the next time I make them I'll start with raw salmon as opposed to cooked and flaked. Then bake them so that they keep their shape. The chicken with bok choy and garlic was another surprise winner. I've cooked bok choy before, but this time the added garlic really made a difference.
This week in healthy meal planning:
Breakfasts: I want to try making Refrigerator Oatmeal. I like my oatmeal hot, but this one looks like an easy and quick morning meal with some prep the night before.
Monday: Cowboy chili, salads, chips and salsa
Tuesday: Slow cooker Balsamic Chicken with brown rice, salad
Wednesday: Chicken pot pie soup, salad
Thursday: Chili roasted pork tenderloin, steamed broccoli, whole wheat cous cous, salads
Friday: Taco night!
