This was an incredibly easy recipe that yielded exactly what I wanted: a tasty coconut cookie. I used Pastel M&Ms nested in a dollop of melted white chocolate as a decoration but I think next time I'll dip these in melted dark chocolate.
Coconut is an acquired taste, in my opinion. I recall not always loving it as a small child, but as I grew older there was just something about Easter and coconut that went together. I wasn't surprised when my son didn't love these birds nests, but maybe someday!
