May is almost over! Not sure how that happened. My baby boy is completing Preschool this week! He'll be in Kindergarten in the fall. THAT IS CRAZY. He is growing like a weed and insists on doing more and more things at home. For instance, he begged us to let him weed the garden today. And yesterday. Begged. He overheard us discussing how to get rid of weeds using vinegar and dish soap. Since it wasn't toxic, we let him have at it with a spray bottle and a brown bag. He happily spritzed his heart out on all the little weeds growing in the sidewalk cracks and around the patio. We'll find out how it works in a few days, I suppose.
My son also likes to help cook with me. He likes to help cut up the veggies for salads and measure ingredients. Now if only he'd drop the picky eater business!
This week's menu plan started off with a holiday barbeque. We invested in a great grill last summer and I forgot how great it is to use. On Sunday night I made grilled pizzas. This was the second time doing so and it definitely turned out better this time. I am hoping to keep incorporating grill cooking into my menu all summer long.
Monday: BBQ turkey burgers, sweet potatoe puffs, baked beans.
Tuesday: Salmon, orzo and asparagus salad with lemon dill dressing
Wednesday: Sante Fe Chicken Salads with added black beans and corn.
Thursday: Last Day of School! We are going to Sesame Place for the afternoon, so will probably eat somewhere near there.
Friday: TBD
Saturday: Grilled chicken, pasta salad
Sunday: TBD
What's on your menu plan for the week? Does your cooking change seasonally? We are expecting hot and humid weather later this week, which means I'll be serving more salads, lighter options, and less baked items at meals. Next Monday starts our CSA pickups for the year. Can't wait to see what we'll get then!
